Decanting wine is to aerate it, or allow it to "breathe". Decanting helps to stimulate the movement of molecules in the wine, in order to, trigger the release of more aromas, giving the senses the full pleasure that the wine has to offer. In addition it is thought to benefit the wine by smoothing some of the harsher aspects of the wine (like tannins or potential wine faults like mercaptans).
